  • add   1/2 lb swiss cheese
  • add   1/4-1/2 cup Roquefort cheese
  • add   1 clove garlic
  • add   2 teaspoons butter
  • add   2 1/2 teaspoons flour
  • add   1 1/2 teaspoons Dijon mustard
  • add   2/3-1 cup dry white wine
  • add   1/2 lb raclette cheese


  1. Heat the wine, butter, flour, dijon and garlic to a very fast simmer whisking well.
  2. If making in a fondue pot or a stove top, add the cheese 1/4 of the amount at a time, melting after each addition.
  3. If making in a microwave, add all ingredients at once and nuke on high for 2 minutes, stir until melted.
  4. Serve with Crusty bread, apples and raw veg.
